
Corn Salad
Isaan food make like Somtum or Papaya Salad but use corn instant
Equipment
- 1 Mortar and Pestle
- 1 Small Pot
Ingredients
- 2 Eggs
- 2 ears Corn
- 2 tbspn Fermented Fish Sauce
- 1 tbspn Fish Sauce
- .5 tbspn Coconut Sugar
- 1 Lemon
- 6 Thai Chili Peppers
- 3 Tomatoes
Instructions
- Boil the corn for 15 minutes
- Hard boil the eggs for 8 minutes.
- Cut tomatoes into quarters.
Mortar and Pestle
- In the mortar and pestle, mash the Thai chili peppers.
- Add the coconut sugar to the Chili peppers and mash.
- Add both fish oils to the mortar and pestle and mix with a spoon.
- Add the tomatoes but don't mash them.
- Squeeze fresh lemon and mix with a spoon.
- Cut the corn off the cobb and add to the mix.
- Cut the hard boiled egg in quarters and add to the mix.
