Corn Salad

Isaan food make like Somtum or Papaya Salad but use corn instant
Prep Time 15 minutes
Cook Time 8 minutes
Servings 3 people

Equipment

  • 1 Mortar and Pestle
  • 1 Small Pot

Ingredients
  

  • 2 Eggs
  • 2 ears Corn
  • 2 tbspn Fermented Fish Sauce
  • 1 tbspn Fish Sauce
  • .5 tbspn Coconut Sugar
  • 1 Lemon
  • 6 Thai Chili Peppers
  • 3 Tomatoes

Instructions
 

  • Boil the corn for 15 minutes
  • Hard boil the eggs for 8 minutes.
  • Cut tomatoes into quarters.

Mortar and Pestle

  • In the mortar and pestle, mash the Thai chili peppers.
  • Add the coconut sugar to the Chili peppers and mash.
  • Add both fish oils to the mortar and pestle and mix with a spoon.
  • Add the tomatoes but don't mash them.
  • Squeeze fresh lemon and mix with a spoon.
  • Cut the corn off the cobb and add to the mix.
  • Cut the hard boiled egg in quarters and add to the mix.
