Corn Salad

Isaan food make like Somtum or Papaya Salad but use corn instant
Prep Time 15 minutes mins
Cook Time 8 minutes mins
1 Mortar and Pestle
1 Small Pot
- 2 Eggs
- 2 ears Corn
- 2 tbspn Fermented Fish Sauce
- 1 tbspn Fish Sauce
- .5 tbspn Coconut Sugar
- 1 Lemon
- 6 Thai Chili Peppers
- 3 Tomatoes
Boil the corn for 15 minutes
Hard boil the eggs for 8 minutes.
Cut tomatoes into quarters.
Mortar and Pestle
In the mortar and pestle, mash the Thai chili peppers.
Add the coconut sugar to the Chili peppers and mash.
Add both fish oils to the mortar and pestle and mix with a spoon.
Add the tomatoes but don't mash them.
Squeeze fresh lemon and mix with a spoon.
Cut the corn off the cobb and add to the mix.
Cut the hard boiled egg in quarters and add to the mix.
